The solid phase microextraction (SPME) coupled to gaschromatography-mass spectrometry (GC-MS) is a promising technique to detect the occurrence of 2-dodecylcyclobutanone (2- dDCB) in irradiated beef. Optimal extraction conditions were obtained exposing a PDMS fibre in the headspace of the sample (1 g of meat in 10 mL of distilled water) for 60 min at 60°C. The limit of detection of 2-dDCB is 3.5 ng/g meat. The inclusion of an internal standard such as 2-cyclohexylcyclohexanone allows a quantitative analysis of 2-dDCB in the range from 10 to 1,000 ng/g meat.
