The overall objective of DRYCHECK project is to provide SMEs a practical and non‐invasive tool to improve the salami production reducing the variability of the products by a user‐friendly, advanced and costefficient technology. The main goal of the project is to design and develop (a) a multi sensor system based on EIT (Electrical Impedance Tomography) able to monitor the drying/ripening process in representative European salami samples and (b) a drying chamber control system which uses the information from the EIT system, provided by wireless communication units based on ZigBee® technology, to readapt the environmental conditions in the chamber for a correct drying/ripening process.
