Identification of the ichtyc species through morfologic and laboratory methodologies

Due to the increase in fish consumption, frauds (especially substitutions) have also increased in the market and can have both commercial and health side effects. The fight towards these kind of frauds is the task of some special healthcare workers and in particular to veterinarians. The methods used are morphological and laboratory tests. The latter being used when the morphological exam is not possible due to the techniques applied when working the product that will make the product lose its anatomical appearance. Two main techniques can be described: electrophoresis and DNA testing. The aim of this work is to demonstrate how such techniques can be applied by the workers, with some practical examples thus showing the difficulties in putting them into practice and the attention towards fish products in our country.
