The world food systems are facing profound and urgent challenges. Although fighting and ending food insecurity represents a major objective, this aim can't be reached without a real paradigm shift towards a sustainable agri-food sector. In this context, innovation and new technologies represent a useful ally. The present paper intends to provide some food for thought on the key concept of "food insecurity", together with food safety and food sustainability, by analyzing some useful examples exploring innovative solutions in the agrifood sector (Big Data and Internet of Things) and innovative products (specifically the Novel Foods).

Abstract

The world food systems are facing profound and urgent challenges.
