A GDO plant located in Modena province (Italy) recently build up a UV depuration and relaying system for Shellfish. This system receive Shellfish from supplier and keep animal live in water before direct sales. This work analyse the system with Risk Assessment methodology in regard to Vibrio parahaemolyticus hazard associated to raw oyster consumption. The goal is the definition of Food Safety Objective in concentration of pathogenic Vp per batch (10 kg) of oyster in entrance to the system. If a FSO of 70 CFU/g of oyster is achieved the median risk of at list one case of gastroenteritis per batch would be less than 1% and in the worst case this risk was equal to 5%.
