This research was carried out on the adipose tissue of 18 Nero di Parma pigs from the same herd, with the aim to assess the effect of the different source of fat [subcutaneous fat depots at dorsal P2 level, inner and outer layers; thigh trimming fat at rump level; intramuscular fat (IMF) from longissimus dorsi], on fatty acids composition. The results confirmed the significant role of the source of fat. Subcutaneous fat showed C10, C16, C16:1, C18, C20:3, SFA and MUFA values significantly lower, and C17, C17:1, C18:2, C18:3, C20:1, C20:2, C20:4 and PUFA values significantly higher than IMF. Subcutaneous fat at P2 level showed a lower content of C18:1, C20:1, C20:2, C20:4 and MUFA than that from thigh trimming. The outer layer at P2 level was lower in C16 and SFA than the inner layer and showed a lower saturated/unsaturated ratio (P<0.05).
