Listeria monocytogenes (L .m.) has been isolated from a wide variety of processed seafoods; nevertheless, investigations on marinated seafoods are very scarce. Marinated anchovies have a very important economic role in central and southern Italian regions. In this communication, we describe the behaviour of L .m. in anchovies during the marinating process.
