Gastronomic bibliography aims to tackle the orderly and systematic study of past and present publications, drawing on the specific professional skills of bibliographers to compile the reference works necessary for researchers' work. It is therefore a specialized field of research, with ancient and noble traditions, part of the broader field of bibliographic studies and practiced with important results in terms of repertoires. Today, however, faced with a flood of studies on food and gastronomy and, in an even broader sense, with culinary communication reaching maniacal levels, bibliographically oriented research in this field is struggling to emerge. What are the reasons for this lack? This contribution will attempt to identify some points for reflection on this paradox.

Abstract
This contribution will attempt to identify some points for reflection on this paradox.I documenti in IRIS sono protetti da copyright e tutti i diritti sono riservati, salvo diversa indicazione.
