This contribution provides a brief overview over the wine supply chain (viticulture and winemaking) and its waste – intended as by-products – listing potential and critical aspects of wine outputs. InnovaEcoFood project developed within the regional funds POR-FESR of the Piedmont Region is taken as an application case study showing the systems deriving from those outputs. Finally, the communication aspects are iden- tified, from the branding of the project to the strat- egies employed – including the packaging of the pro- ducts obtained – as a vehicle for promoting the as- pects of sustainability and the values of the system.
