This work shows a methodology to analyze and monitor the properties of frozen food along the cold chain process. A preliminary study of two kind of sample is performed with soups and solid cube vegetables. The pigment color is extracted through a simple procedure and analyzed by means of a low-cost spectroscopy portable device.
