Cellulose is a polysaccharide characterized by the presence of β-glucose units linked with 1,4 β glycosidic bonds. Under certain conditions it may be subjected to oxidation and hydrolysis processes. Different kinds of cleaning treatments have been tested on ancient papers, such as cellulose ethers, hydro-alcolic solutions, cleaning by immersion in water. In the last years rigid gel of polysaccharides were experimented, such as Agar and Gellan gum used as water gelling agents. With Gellan gum it is possible to adjust the amount of water to give the paper using different concentration. The gel is transparent and the treatment is more controllable. Gas Chromatography coupled with Mass Spectrometry and Size Exclusion Chromatography were used in order to study the compounds extracted from the paper during the cleaning treatment with Gellan gum.
