Quality is going to became a critical factor for the success of domestic cereal production. The paper presents a sampling procedure for monitoring the quality of autumn-winter cereals in three regions of Italy: Emilia-Romagna, Lombardia and Veneto. Data are to be obtained from farms with two objectives. The first is to collect technical and economic informations. The second is in order to submit seed samples to chemical and technological analysis. This method allows not only to collect a stratified sample representative of the cereal crop production, but also the weighting of the results of the chemical, physical and technological analyses of grains taken from farms. It is thus possible to provide unbiased estimators of average figures for the most common varieties grown in the various agricultural subdivisions of the region.
