Olive oil is one of the high-quality products for which Europe/the Mediterranean is renowned. As all prized products, olive oil is the subject of fraudu lent practices, which compromise the market positions of European and Mediterranean countries. A series of EU-funded projects has addressed the integrity of the olive food chain, improving the methods for traceability and authenticity protection, based on chemical, genetic analysis, and block chain approaches. The new challenges and the new technologies and the OLEUM databank will be discussed.
