The contribution aims to reflect on the theme of ‘wine tourism and law’ from a public law perspective in order to grasp those aspects of regulation that contribute to aligning this discipline with the dominant values in this historical moment. The Authors will examine some specific segments that allow an effective realization of the principles of sustainability and valorisation of the territory, but also a use of resources in line with the ethics that have already permeated the concept of sustainable tourism for some time. In fact, there are some activities that are par‑ ticularly incisive in terms of growth and which determine an objective improvement in environmental conditions and which require minimal consumption of environmental resources compared to the resulting advantages. These activities are part of a new type of development, no longer just sustainable or environment friendly, but in full synergy with the recently coined concept of the “blue economy”.
