The development of biosensor technology has made available online quality control of food production, reducing the cost of food production and improving safety and food quality. Consequently, the introduction of biosensors in the agro-food industry has changed business models of firms operating in both the agriculture and agro-food industry. This chapter aims to evidence existing trends in both technological and non-technological innovations and new trends and future challenges of the food industry.
